Coffee Lot Specifications
Recommended Brew Parameters
Crafted specifically by Tim & Wendelboe Atelier's head roaster to unlock optimum extraction from these high-density beans.
- Brew Ratio: 1:17.5 (15g coffee / 260g water)
- Water Temperature: 96°C – 99°C
- Grind Size: Medium (V60 / Chemex)
- Bloom Technique: 45s with 50g water
- Target Drawdown: 2:45 – 3:15
- Resting Window: 21–30 days post-roast (Peak extraction after CO2 degassing)
Why 2–4 Weeks of Degassing Matters
Ultra-light roasts preserve delicate cellular density. Brewing within the first 10 days leads to CO2 channeling and sharp carbonic acidity. For peak floral sweetness and silky mouthfeel, rest these beans for 14 to 28 days post-roast.
