Extreme altitude and cool alpine nights retard fruit respiration, concentrating monosaccharides and anthocyanins in the coffee cherry. When dried naturally on raised African bamboo beds with meticulous hand-turning, these sugars impart intense blueberry and honey notes characteristic of authentic Sidama naturals.
